Port Wine Poached Pears
  1. In a two quart pot add port wine, sugar, water, cloves, star anise, orange zest, and cinnamon sticks. Bring to a high simmer till sugar is dissolved.
  2. Add pears to liquid making sure the pears are fully submerged cover with parchment paper and simmer till tender.
  3. Transfer to a container and cool, when fully chilled pears can be removed from poaching liquid.
Poached Pear vinaigrette
  1. Combine all ingredients minus the oil in a blender. Blend on the highest speed until very smooth.
  2. Pass through a fine mesh chinois.
  3. Slowly whisk in olive oil to form a temporary emulsion.
Ancient Grains Clusters
  1. Add brown sugar, soybean oil, honey, chicken stock and maple syrup to a two quart pot. Bring to a high simmer to dissolve sugars.
  2. Add chia, teff, millet, sesame seeds, and flax bring to a high simmer (soft ball stage of sugar) and cook stirring occasionally for five minutes.
  3. Remove from heat and fold in cooked quinoa and sorghum.
  4. Spread mixture out onto a parchment lined sheet tray and allow to cool slightly. While still warm, form into small clusters of 15 grams each. Clusters should hold shape, but not turn glass like.
Chia and Teff Crisps
  1. Cook both grains separately until all the liquid is absorbed. Combine chia and teff.
  2. Spread a very thin layer of the chia and teff mixture between two silpats and bake in 250°F convection oven for 30min until crisp.
  3. Remove sheets from silpat and season with kosher salt
  4. Sheets can be stored in an airtight container for 7 days.
Poached Pears
  1. Place port wine, water, sugar, cloves, cinnamon, star anise and orange peel in a 2qt. pot. Bring to a boil to dissolve sugar.
  2. Reduce to a low simmer and add peeled whole pears cover with cartouche of parchment paper. Simmer for 45 mins. or until tender
  3. Cool in poaching liquid overnight.
